At Gipsy Hill Brewing Company, we’ve always believed that brewing great beer goes hand in hand with protecting our planet. For us, sustainability isn’t just a box to tick; it’s woven into everything we do. We’re on a mission to reshape what brewing can be, aiming not just to reduce our carbon footprint but to create a net positive impact. Through hard work, partnerships, and a commitment to transparency, we hope to inspire others in the industry to join us in this journey. We believe that the future of brewing can be sustainable, collaborative, and deeply rewarding.
When we began working with Wildfarmed, pioneers in regenerative agriculture, it changed the way we thought about our raw materials. Wildfarmed grows barley without tilling, pesticides, or synthetic fertilisers, using a method that nourishes the soil and sequesters carbon, all while encouraging biodiversity. By sourcing this barley, we’re doing more than buying a sustainable ingredient—we’re helping regenerate the land itself. This approach is part of our commitment to sustainability at every stage of our production process, and we see it as a model that other breweries could adopt to help reduce the industry’s environmental impact.
One of the most impactful ways we’ve seen the results of regenerative agriculture is through the carbon sequestration achieved in our Swell Lager and Trail Pale. These beers don’t just have a reduced carbon footprint—they have a negative one. Swell Lager, at 4% ABV, sequesters an impressive -30 grams of CO₂ per pint, while our Trail Pale takes it even further with a staggering -40 grams of CO₂ per pint. These figures mean that when someone enjoys a pint of Swell or Trail, they’re actively reducing atmospheric carbon, which is equivalent to planting trees with each pint served.
To put this into perspective, a typical pint of beer generates around 350 grams of CO₂. By bringing that figure into the negatives with Swell and Trail, we’re turning our beers into a tool for carbon reduction. We estimate that if a single pub serves four kegs of our carbon-negative beer each week, that venue is effectively offsetting the carbon emissions of over 397 trees annually. This isn’t just a minor adjustment; it’s a game-changing shift in what beer can mean for the planet.
But we didn’t stop there. We’ve developed a hop reuse programme that cuts waste by repurposing hops from previous batches to add flavour to new brews. This closed-loop approach not only minimises greenhouse gas emissions but also makes great economic sense by reducing our dependence on fresh hops. By treating sustainability as an opportunity for creative problem-solving, we’ve found ways to improve our processes while lowering costs and doing right by the environment. We’re proud of this innovation and hope it sparks similar programmes across the industry.
Our commitment to a sustainable future is clear in our goal to become the world’s first carbon-negative brewery without relying on offsets. Many breweries turn to carbon offsets as a way to neutralise their emissions, but we wanted to go further. We asked ourselves, what if our beers could help the planet instead of just reducing harm? The result is our line of carbon-negative beers, like Swell Lager, which sequesters 30 grams of CO₂ per pint. It’s a bold ambition, and we know it’s not an easy goal to achieve—but for us, it’s worth every effort. We hope this inspires others to look beyond carbon neutrality and aim for a net positive impact.
Transparency has been a key part of how we connect with our customers. By sharing the story behind each beer—from farm to pint—we’re giving people a way to understand the real impact of their choices. It’s been incredibly rewarding to see how our customers respond when they learn about the journey of each ingredient and the environmental benefits that come with every sip. For us, this kind of transparency isn’t just good marketing; it’s an opportunity to educate and inspire. We encourage other breweries to open up about their sustainability efforts as well because when customers are informed, they make choices that drive meaningful change.
Sustainability is a team effort, and we couldn’t do this alone. We’ve built strong relationships with suppliers like Wildfarmed, and we work closely with our local community to spread sustainable practices far and wide. We’ve seen firsthand how these partnerships can elevate our efforts, creating a ripple effect that goes beyond our own brewery. By collaborating with our supply chain, we’re able to encourage sustainable practices from the ground up. We believe that, together, breweries of all sizes can help drive positive change by uniting suppliers, distributors, and even waste management providers around common sustainability goals.
One of our most ambitious targets is to source 100% of our barley from regenerative farms by 2028. Scaling regenerative practices industry-wide could significantly reduce the environmental impact of brewing. We know that shifting to regenerative farming requires commitment, but as more breweries demand sustainably grown ingredients, suppliers will be motivated to make the switch. When breweries large and small support this movement, we can help make regenerative agriculture accessible and affordable for all, creating a positive shift that goes beyond just beer.
Right now, one of the biggest challenges in the industry is the lack of universal carbon standards. Without them, it’s hard to compare our environmental efforts with others. While we’ve established our own carbon benchmarks, we think an industry-wide approach would go a long way toward aligning sustainability efforts across breweries. Setting shared standards for emissions reduction would help us all measure our impact more effectively and provide a clear picture to customers. Imagine a certification that indicates a brewery’s commitment to sustainability, much like organic or Fair Trade labelling. We believe that’s where the industry is headed, and we’re excited to help lead the charge.
Ultimately, our journey toward sustainability isn’t just about reducing emissions or cutting waste—it’s about building a future where every pint we pour is a positive force for the environment. By breaking down competitive barriers and sharing what we’ve learned, we hope to inspire a collective movement across the industry. Our journey has taught us that sustainability isn’t just a competitive advantage; it’s an essential part of what brewing should be. We believe that by working together, breweries can create a legacy of environmental stewardship and a future we’re all proud to share.
To every brewery out there, big or small, we invite you to join us. Let’s push the boundaries of what’s possible, innovate at every step, and make every pint a celebration of progress. Together, we can craft a world where great beer is not only enjoyed but also cherished for its positive impact on the planet. Sustainability is a journey, and we’re just getting started.
