Forgotten foods need to be remembered

COMPASS IS PROMOTING Britain’s “forgotten foods” as part of a brand refresh for Restaurant Associates.

 

In a new partnership with Slow Food UK, the caterer will be introducing new dishes to help diners rediscover British culinary traditions.

 

Grimsby Smoked Haddock, Westcombe Dairy Cheddar and Gloucester Old Spot Pig will all be on the menu in support of Slow Food UK’s Ark of Taste campaign.

 

The campaign has travelled around the country collecting small-scale quality produce “threatened by industrial agriculture and environmental degradation”.

 

Slow Food UK CEO Catherine Gazzoli said a lot of traditional British foods have already been lost, so the new project was timely.

 

“Restaurant Associates plays a very important role in influencing food choice, so we are pleased that their new menus will help aid us in our ambitions for promoting artisan and tradition-rich foods to diners,” she added.

 

Slow Food UK has been working closely with a number of chefs who support small producers through its Chef Alliance.
