PROFESSOR CHRIS Elliott, a long-time food safety specialist who headed up the horsemeat investigation, has spoken to the Guardian this week about the progress made since the horsemeat scandal, and the dangers that remain.
He says the scandal has made businesses much more aware of the risks in their supply chain, but warns that small companies still struggle to have the resources to monitor efficiently their supply chains effectively.
Authorities across the EU are also working more closely, but with so many food products on the market, he warns that consumers might not be safer.
He suggests larger companies support smaller ones, and trade groups disseminate fraud intelligence throughout the industry.
