The stunning venue itself, the Back to the Future theme to the fascinating menu designed by Executive Chef David Collison, the ingredients, staff uniforms, table linen, crockery, fine wine and cocktails – all will tell a story of sustainability. And to spice things up, this years theme is Back to The Future, which will feature some surprising creations and will open our eyes to how we can think differently about some older practices and flavours that are returning to the mainstream.

The Footprint Awards in 2011 started a student internship scheme supported by sponsors to create new research and to attract new talent into sustainability in the foodservice industry. Thats worth supporting when students are struggling to find work experience.
